Seafood Pasta Introduction  

In the coastal area of Sicily, the preferred sauces are mostly made with fish coupled with either saffron, herbs or tomato. Depending on the location the sauces are characterized by the fish caught in the area and by the other local ingredients abundant in the area like cappers, pinoli, nuts, pistachio, raisins, olives, wines, fennels, other vegetables and etcetera.  

Some of the fish caught in Sicilian water are not available here, however there is a large variety offered that makes easy to find a good substitute that will enable to compose a great and tasteful fish sauce.  

As usually, the most important recommendation is to buy fresh fish. 

Fish sauces are usually simple and easy to prepare: the pasta dishes are delicious, nutritious and healthy.  

In today fast moving life, a convenient and quick way to arrange a dinner is to prepare a simple seafood pasta dish and a salad that paired with a good wine, it can be offered to your family or guests, as a complete and satisfying meal.
